Enjoy this easy healthy low carb chicken schnitzel that is served topped with a fried egg! Coated in almond flour and flax meal it's the perfect low carb, keto, gluten free, and dairy-free meal.
Mix together the almond flour and flaxseed meal in a bowl. In a separate bowl, beat an egg.
Dip each chicken breast into the egg, making sure both sides are coated, then drop it into the almond mixture. Make sure the chicken is coated on both sides, then season them with salt and black pepper.
Heat the olive oil in a large skillet and cook the chicken over a medium heat for around ten minutes, turning half way through the cooking time.
While the chicken cooks, melt the butter in a smaller skillet and fry the eggs to your liking.
Transfer the chicken to two serving plates, and top each one with an egg. Lay two anchovies (if using) over the top of each egg, then sprinkle the parsley over the top and serve.
