Everyone loves a schnitzel! Although traditionally made from veal, I've used flattened chicken breasts in this recipe due to popularity and availability. The low carb breading is made from the same coating I used for my Paprika Chicken Bites - just without the paprika! It's nutty and flavorsome and even my carb-loving husband is a fan of it!
The 'à la Holstein' part of the schnitzel refers to Friedrich von Holstein, who invented the recipe in the late 19th century in Berlin. After crisp frying the veal cutlets in the traditional way, he topped them with a fried egg, salty anchovies and a buttery caper sauce. In my version the egg is essential, the anchovies are optional (I've tried it with and without - and I love it either way) and the capers - well let's just say that I'm not a fan. It's a wonderful combination of flavors and a fantastic low carb meal.
Low Carb Breading
To make the low carb "breading" mix together almond flour and flaxseed meal in a bowl. Flaxseed adds a lovely nutty flavor to the coating, and is so good for you too - lots of fiber, lignans, and omega-3s. Oh and there's only 0.2g net carbs per tablespoon! In a separate bowl, beat an egg.
How To Make Low Carb Schnitzel
Flatten out two chicken breasts with a meat tenderizer - I find this can be rather therapeutic! Dip each chicken breast into the egg, making sure both sides are coated, then drop it into the almond mixture. Make sure the chicken is coated on both sides, then season them with salt and black pepper.
Heat some olive oil in a large skillet and cook the chicken over a medium heat for around ten minutes, turning half way through the cooking time. While the chicken cooks, melt some butter in a smaller skillet and fry the eggs to your liking.
Transfer the chicken to two serving plates, and top each one with an egg. Lay two anchovies (the kind that come packed in oil in cans) over the top of each egg - this is optional but tastes great! Sprinkle some chopped fresh parsley over the top and serve.

Low Carb Chicken Schnitzel A La Holstein
Ingredients
- 2 chicken breasts, (6 oz each)
- ½ cup almond flour (45 g)
- ¼ cup Bob's Red Mill Golden Flax Meal (25 g)
- 3 large eggs
- salt and pepper
- 1 tablespoon olive oil
- 2 tablespoon unsalted butter
- 4 canned anchovies (optional)
- fresh flat-leaf parsley, chopped
Instructions
