But, I am not sure what the people next to me at the traffic light thought! I hope I didn't get their day off to a bad start... Any-hoo.
I often cruise the the sale meat section of the grocery store when I am there (which is almost every day since starting the blog). I find all kinds of bargains in that little section of the meat case. The other day I purchased about 2 ½ to 3 pounds of pork shoulder blade ribs (also called country style ribs) for around six dollars. I had a hankering for Pulled Pork Soft Tacos. And, yes, they are low carb, gluten & grain-free and dairy-free. Don't worry. I got your back! And, you'll be happy to hear that this is a crockpot recipe. See, I'm still looking out for you.
Something special happens to a piece of meat in the crock pot. Tough proteins melt, separating the fibrous strands of muscle and fortifying the broth with gelatin. All the flavors combine to mix and marinate while bathing the meat with steam and moisture, softening tough tissues, and leaving great tasting meat that is pull-apart tender. Mmmm. All of that crock pot magic is wonderful. But even more wonderful, is the fact that once you put your dinner in your crock pot, you can forget it and move on to something else: like writing a blog, helping your kids with their homework or taking the cat to the vet. Yeah, extra time!
I mentioned in an earlier post that my husband loves any food that ends in "exican". Well, here I go again...he has a special weakness for Pulled Pork. Well, so do I. So do my kids. Does anyone not enjoy pulled pork? Well, a Vegetarian might not get excited about pulled pork but they might like the One-Carb, Gluten-Free Tortillas, the Sesame Slaw or the Green Apple Salsa.
I've been craving for tacos for a while. My kids LOVE tacos, especially when I can find crunchy corn taco shells that don't have gluten in them. They don't especially appreciate when I put our taco fillings in a lettuce leaf and call it a taco. Now that Dimples has braces, we don't do crispy taco shells for the kids. And admittedly, sometimes we get tired of wrapping everything in a lettuce leaf, ourselves. So, I came up with a recipe that solves that dilemma: One-Carb, Gluten-Free Tortillas. Low Carb Pulled Pork Tacos With Sesame Slaw
Ingredients
Pulled Pork Country Ribs
- 2 ½ pounds pork country-style ribs
Crockpot Rib Sauce
- 1 cup tomato puree
- ¼ cup apple cider vinegar
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon thyme
- ¼ teaspoon instant coffee
- ¼ teaspoon cocoa powder
- 1 teaspoon cumin
- ½ teaspoon chile powder
- 2 tablespoons erythritol
- ½ teaspoon salt
Vinegar Dressing
- ½ cup olive oil
- ¼ cup water
- ¼ cup apple cider vinegar
- ½ teaspoon salt
- ½ teaspoon pepper
Green Apple Salsa
- 4 ounces Granny Smith apple smallish apple minus the core
- 2 teaspoons lime juice about ½ a lime
- 1 whole scallion mine was very large
- 1 tablespoon cilantro
Sesame Slaw
- 10 ounce bag of Angel Hair Coleslaw
- 1 cup mayonnaise
- 3 tablespoons white vinegar
- 1 teaspoon sesame oil
- ¼ cup sweetener of your choice
Tortillas
- 1 batch One-Carb Gluten-Free Tortillas
Instructions
- To make the Pulled Pork: Brown the ribs in a frying pan, then put them in the crockpot. In a small bowl, add the ingredients for the sauce and mix with a fork or spoon. Pour over the ribs. Cook Ribs on low over night. Remove the pork from the crockpot and shred with a fork, removing and discarding any bones or large pieces of fat. Pour the sauce from the crockpot over the pork and mix it in, gently. In a small bowl, add the vinegar dressing. Mix and then pour ½ of it over the pork and mix. If the pork is not moist enough add more vinegar dressing. Mix again to distribute the dressing.
- To make the Sesame Slaw: Mix the ingredients for the Sesame Slaw dressing. Taste for sweetness and adjust. Pour half over the angel hair slaw and stir to evenly distribute the sesame dressing. Pour in more as you like, being sure to stir thoroughly.
- To make the Green Apple Salsa: Cut the apple into thin matchsticks about ½ - 1 inch long. Very thinly slice the scallion on the bias all the way up to the green stalk just before it becomes hollow. Chop about 1 tablespoon of cilantro or more if you want. Mix the green apple, cilantro and scallion together in a small bowl. Squeeze the juice from ½ of a lime over the green apple and scallions. Mix.
- To assemble the soft tacos: Place a tortilla on a plate. Put a small amount (about 2-3 tablespoons) of the Sesame Slaw in the middle of the tortilla. Put some Pulled Pork on top of the sesame slaw and garnish the pork with the green apple salsa.

I use this slaw for everything. Tacos? Slaw. Cookout? Slaw. Brush my teeth? Slaw. It's so easy to make, and so delicious! I use Z sweet because in my opinion Swerve's granules are too big, and nobody wants crunchy sugar in their slaw. Z sweet is very fine and works well here. Kudos!
